Black Diamond Medium Cheddar
Cheddar is one of the most popular cheeses in the world, and Black Diamond’s Medium Cheddar Cheese is the perfect balance of cheddar’s characteristic flavour and sharpness. It’s a happy medium between mild and old and a good introduction to cheese in general. Mellow in character and flavourful with rich, creamy and nutty notes.

Recipe: Leek and Cheddar Quiche
- 2 pie shells
- 5 large eggs
- 2 cups Lactantia milk or 15% cooking cream
- 1 pinch cayenne pepper
- 2 cups Black Diamond Light Medium Cheddar, grated
- ½ lb ham, diced
- 1 cup leeks, chopped and blanched in boiling water for 5 minutes
- salt and pepper to taste
- Preheat oven to 375°F.
- In a bowl, lightly whisk eggs, cream, ham, and leeks with a fork. Add salt and pepper to taste.
- Pour egg mixture in pie shells, filling up to the ¾ mark, and top with grated Black Diamond Light Medium Cheddar.
- Bake for 20-30 minutes.
